Mushchicorn Soup

This delicious mushroom, chicken and sweetcorn soup is a meal in itself!

Ingredients:

2 cans of mushroom or cream of chicken soup
1 can of sweetcorn kernels
1 large onion, finely chopped
As much cooked chicken meat as you like,

cut into small chunks
Pepper and salt

Method:

Combine soup and equivalent water, can of sweetcorn including juice, onion and chicken in a large saucepan (preferably heavy base).

Bring slowly to the boil, stirring often.

Simmer until onion is soft, continuing to stir frequently to stop sticking and burning on saucepan bottom.

Add pepper and salt to taste, mixing well.

Serve with warm crusty bread or garlic bread.
