DELUXE COOKIE CREAM CAKES

These rich, sumptuous little cakes are created in quite a different way to normal cakes,

and are equally unique in their irresistible taste!

 

Ingredients:


2 (or more) packets of plain chocolate (or other flavour) cookies
2 (or more) containers of whipping cream
Honey, cocoa or coffee for flavoured cream, if desired
Choc chips, glace cherries etc for decoration

Method:

These cakes need to be started at least the day before they are to be used.

They require no baking.

Whip one container of cream until softly holds shape, and whip more as required. Flavour, if desired. You may wish to use different flavours for different cakes. Plain cream can be used at the early stages, with flavoured cream being used for the final coating.

To make each small cake you will need 4 cookies. These will need to be placed on trays that will fit in your fridge.

Spread cream thickly between cookies, and place the 4 cookies on top of each other in a stack.

Coat all over with cream.
Repeat until required number of cakes are made.

Cover with plastic wrap (each time they are refrigerated). It may be helpful to use small glasses, or something, on the tray to help hold the plastic up off the cakes, especially in the last stages.

Leave in fridge overnight.

Next day, re-coat cakes with cream. Leave in fridge for a couple of hours, then coat again, once again leaving for a couple of hours.

At this point, test the cakes with a skewer. If they are ready, they should feel soft and the skewer should go in easily. If not, re-coat and leave again in fridge.

A short while before required use, coat cakes thickly in cream... flavoured if desired... and decorate, using choc chips, glace cherries or whatever you like.

Do not do final coat too early, as cookie colour will seep through, especially if cream is white. Keep in refrigerator until needed.

This method can also be used to make a log cake, by stacking cookies on their sides, joined by cream. Shapes, such as numbers or letters etc, or feature cakes, can also be created by arranging cookies appropriately.
