Try one of these recipes using the rice cooked in your new electric rice cooker...
Peppered Beef
Ingredients:
600g thinly sliced steak
2 thinly sliced onions
2 spring onions, chopped coarsely
2 tspn finely chopped fresh ginger
2 finely chopped cloves fresh garlic
1 red capsicum chopped coarsely
1 tsp crushed Sichuan peppercorns
1 tbspn crushed black peppercorns
2 tspn sugar
1 tbspn soy sauce
1 tbspn oyster sauce
2 tbspn rice wine vinegar
1 tspn sesame oil
oil for cooking
Instructions:
- In a bowl, combine the steak strips, onion, garlic, ginger, peppercorns, soy sauce, oyster sauce, sugar, rice wine vinegar and sesame oil. Mix well. Cover with plastic wrap and allow to marinate for 2 hours (or overnight) in fridge.
- After marinating is complete, drain excess liquid.
Stir in capsicum and spring onion.
- Heat wok to a high temperature.
- Add oil (about 1-2 tblspns) and coat wok sides by swirling.
- Add stir fry mixture and stir fry for about 6 minutes, or until cooked to your preference. If you prefer, stir frying can be done in 2 or 3 lots, rather than all at once, especially if your wok is small.
- Serve immediately over cooked rice.
Pork and Egg Spicy Rice
Ingredients:
4 cups cold cooked rice
6 lightly beaten eggs
200g finely chopped cooked pork
1/2 cup frozen or fresh peas
1 finely chopped onion
5 large, thinly sliced spring onions
2-3 seeded, and finely chopped, red chillies
3 cloves finely chopped garlic
1 tblspn grated fresh ginger
1/3 cup chopped coriander
onion flakes
salt and pepper
2 tspn seasoning sauce
2 tblspns ghee or oil
Instructions:
- Heat the wok to a high temperature.
Add the ghee/oil and coat sides of wok.
- Over a medium heat, stir fry the capsicum, onion, spring onion, peas, chillies, garlic and ginger, for approximately 2-3 minutes.
Add the pork, and combine.
- Turn down the heat then add the beaten eggs.
Season with salt and pepper.
Stir eggs gently until almost set and creamy.
- Add rice and gently stir to combine ingredients and heat through.
- Add seasoning sauce and coriander. Stir into mixture.
- Sprinkle with onion flakes to garnish, and serve immediately.
